My Muffin



Sausage McMuffins are so good. I don't know if that's real sausage or how they get that egg to fit so perfectly on that english muffin. It's chewy and salty, greasy and cheesy.

...and let's not forget how portable and convenient they are! It's made for eating while driving.

Yes, I can appreciate all of that.

However, I do not need to eat McMuffins. Nope, I really don't.

But I'm committed to eating breakfast and that generally does happen in my car on my commute so I look to the McMuffin for inspiration only. I made myself something equally portable but not nearly as greasy and salty.

Grilled Goodness

It's a rainy day, the kind that makes you want to stay in your pajamas. The cloud cover is complete, the drizzle is consistent and you need a jacket to venture outdoors. What I wouldn't give for a bowl of soup and a side of hot chocolate.


And while we're at it, grilled cheese would make that soup taste even better. It's true, creamy cheese melted between two pieces of buttered and toasted bread can improve any situation.

Have a bad day? Need a quick dinner for your kid? Would you like to eat, but your fridge is empty? Surely, you have bread and cheese! See? Problem solved.

And if you're anything like me you may want to put a spin on this classic. I used havarti cheese, and tossed in some sauteed mushrooms. There are no rules, no restrictions. The results will be the same, good and gooey!

Ingredients
Bread
Cheese
Butter

1. Heat up a pan or skillet. Put some butter in that pan, when it melts then toss in your bread. Let it sit for about 30 to 45 seconds, that will toast it. Flip! Add more butter to the pan if necessary.
2. Place your cheese and any other toppings in the center of one slice, then top it with the other slice.
3. You can press it flat with a spatula if you want to, it's fun. Flip the entire sandwich for even toasting.
4. Let this go on until you can tell your cheese is melted.
5. That's it. Enjoy.

Pancake Face


I'm developing a new habit. It's called breakfast.

And I'm not talking about the granola-bar-and-coffee, or Starbucks-and-a-muffin kinda breakfast. I've decided to wake up and cook myself a respectable meal every morning. It is, after all, the most important meal of the day and the time you can consume the most calories. This is the fuel you'll be burning off for the rest of the day, so go for it! 
See these pancakes? They were easy enough. I used a box mix and added some banana and walnuts to punch it up. I don't regret the decision. It may be the best move I'll make all day. :)

Ingredients

2 cups Hungry Jack Buttermilk Pancake & Waffle Mix
1 Banana

1. Follow the instructions on the box to make a pancake batter. All you need to do is add water!
2. Mush up a banana until it's all mushed, no longer solid and stir that into the batter.
3. Make your pancakes according to the box instructions.
4. Enjoy!
