Pizzas!

Sometimes pizza gets pretty mundane, the standard options are sausage and pepperoni. It’s a godsend when we stumble upon a place that has more diverse options. Places that include mushrooms, spinach, goat and feta cheeses, chicken or bacon can be a real delight. But often even those alternative pizza joints miss the mark. They’ll give you mushroom and sausage but if you want spinach too, well, you may just have to pay an additional $1.99, or what if you want to add just a handful of Italian sausage to the veggie pizza? That may cost you a whole $2.50. Or worse, they may tell you they can’t do that. They’ll give you some sausage in a bowl on the side.

This is what inspired me to make my own pizza and load it up with all of my favorite things i.e. gorgonzola cheese, cherry tomatoes, succulent chicken, spinach!

And it scarcely cost me anything more than a lil bit of kitchen labor, but I’m all for that. At the grocery store, the only extra ingredient I bought was Pillsbury pizza dough (but it’s not hard to make one from flour, if you’re up to it).

The first one (not pictured here) had all of the favorites I mentioned above. Then my mother demanded I make it again sans the tomatoes because those ignite her acid reflux. She kept referring to the chicken as “my chicken”
“I want you to make another pizza and put my chicken on it,” she said. I was honored that she felt inclined to take ownership of the chicken breast I put on top of the pizza. I seasoned it with Italian spices and let it bake in the oven so it’s super moist and flavorful.

The other pizza pictured is what happens when you buy more squash than you can eat alone. My husband is committed to green beans and romaine lettuce for his vegetable intake. Anyway, here’s how I made them

Ingredients
Pizza Dough
Whatever toppings you like

1. Spread out the dough
(Bake for about 5 minutes prior to topping, if you want crispier crust)
2. Put the sauce on first, then some cheese
3. Then the toppings (if you use meat, make sure it’s cooked first)
4. Then more cheese
5. Bake for 15 minutes.
