Dirty Rice
 
 
Ingredients
  • 1 lb ground turkey
  • 1 lb diced skinless boneless chicken
  • 1 diced onion
  • 2 cups cooked rice
  • 3 cups defrosted frozen vegetable mix
  • salt
  • black pepper
  • granulated garlic
  • red pepper flakes
Instructions
  1. Begin by preparing your rice. You'll need to use 1 cup of dried rice to yield 2 cups of cooked rice. The ratio for making rice is 2 parts liquid for 1 part water. So in a pot add 1 cup of rice and 2 cups of water or broth. Bring to a boil then reduce heat and allow to simmer until all of the liquid is absorbed. Remove from heat and set aside.
  2. In a large pan, saute the onions until they become translucent. Add the ground turkey and season liberally with black pepper. Add salt, garlic powder and red pepper flakes. Cook until brown. Remove the ground turkey from the pan and set it aside in a bowl.
  3. Next add the diced chicken to the pan and season with salt and pepper. Cook until done. Turn off the heat.
  4. Place the frozen vegetables in a colander and run cool water over them until they defrost and make sure they're all separated and not frozen together.
  5. Now, add the rice into the pan with the chicken one cup at a time. Then add the ground turkey and fold everything together. Don't stir too vigorously or you could smoosh or break up your rice. Finally, add the vegetables and fold them into the mix. Once everything is combined, turn the heat onto low so it all warms up together. Taste and add more seasoning if necessary.
