    Cilantro Steak

    I believe everybody needs a little red meat from time to time. If that’s not your belief, let’s just agree to disagree. Now. I believe this because at least once a month I crave the stuff. I think it’s the iron. And what better way to eat beef than a steak? I took this steak south of the border with some latin flavors. I paired it with black beans and rice and seasoned it with a homemade cilantro rub. Ingredients SteakCilantroGarlic PowderSalt PepperCayenne 1. Season the steak at room temperature2. Let it sit for at least 30 minutes3. Grill it for about 3 minutes on each side.

    Coconut Macaroons

    Yesterday my friend celebrated her 20-12th birthday. I thought about getting her a $20 gift card from TJ Maxx, because she likes shopping at a variety of places and always finds the hidden treasures there.  Then, I  considered buying her a CD for $9.99. Or some accessories for about $15. But I know she loves to eat my coconut macaroons and watching her savor those is priceless. The recipe is rather simple so I decided to embellish the treats a bit with a couple of her favorite flavors- chocolate and lemon.  Ingredients 2 Egg Whites 2/3 Cup Sugar 3 oz. Flaked Coconut 1.     Spaghetti Light

    Angel Hair is my favorite variety of pasta. It’s just so delicate and light in my mouth. I can really savor those fine noodles. The name itself goes a long way in earning my favor as well – “angel hair.” So precious and delicious.  It doesn’t take much to dress it up. So, with that in mind I’ve gotten in the habit of using a rather light meat sauce to top it.  It starts with ground chicken, onions and bell peppers sauteed together in a pan.
